Cinco de Mayo is right around the corner. So Mixology’s newest friends Danny and Rubén from El Vaquero Mexican Restaurant stopped by the Mix Studio Bar to teach Mix listeners how to make four incredible cocktails! Learn to make recipes for El Vaquero’s one and only Buckeye Margarita. Or impress friends at your next party with a Michelada. Maybe try your hand at the very simple and delicious Jalisco Mule or Paloma. Whatever you decide, you’re sure to celebrate Cinco de Mayo with proper drink choices.
The guys also brought an entire spread of delicious appetizers to pair with each drink, including Mexican Lettuce Wraps – Sweet & spicy marinated chicken served with lettuce wraps, topped with fresh feta cheese and cilantro. Avocado Rollitos – deep fried small rollitos filled with black bean corn salsa, cheese and avocado, served with lettuce and chipotle dressing. Queso Fundido con Chorizo – Grilled Mexican pork sausage, melted cheese with green onions. And Chicken Nachos – simply shredded chicken over nachos with green onions and fresh tomato. El Vaquero Guacamole
- 6 ripe avocados
- 3 fresh squeezed limes
- half cup cilantro
- half cup of tomatoes
- half cup of onions
- half cup jalapenos
Cut, scoop, and mash avocados into a large bowl. Add most of the onion, cilantro, and jalapenos. Squeeze the limes into the bowl. Mash and mix ingredients well. Add tomatoes and mix well, but be careful not to smash tomatoes so they don’t release the juices. Scoop away from the sides and top with remaining onions, cilantro, tomatoes, and jalapenos.
Buckeye Margarita (Only found at El Vaquero)
- 2 oz Patron Reposado
- Quality strawberry Syrup
- Fresh Lime Juice (1 lime)
- Homemade sour mix
- Lime for Garnish
Jalisco Mule
- 1 freshly squeezed lime
- 1oz Patron Resposado (Anjejo was used in the video)
- 1 can/bottle of ginger beer
- Lime wedge for garnish
Paloma
- Use a lime wedge to wet the rim and then salt the rim
- 1oz Patron Resposado
- 1 freshly squeezed lime
- pinch of salt
- 1 can Squirt grapefruit soda (can also use diet Squirt)
Michelada
- 1 can of Mexican beer
- Tomato juice mix (similar to bloody mary mix)
- Lime Juice
- Rim glass with lime juice, then Tajin (lime/chili seasoning)
- Garnished with lime
